Baba ghanoush is a roasted-eggplant delicacy. This popular Mediterranean dip pairs perfectly with pita, bread or meat. If you enjoy hummus, you should definitely give baba ghanoush a try, because its flavorful ingredients pack a lot of nutrition too. This dish is made with eggplants, tahini and lemon juice. Eggplant is a great source of folic acid and potassium. Sesame seeds in the tahini have calcium, iron and so many other minerals. And we don’t need to harp on the benefits of olive oil and lemon juice.
